One Pot Sun-Dried Tomato Pasta

Description

This super easy and delicious One-Pot Sun-Dried Tomato Pasta is the perfect weeknight meal! Tortellini pasta cooked in a creamy and spicy gochujang sauce that's loaded with sun-dried tomatoes, capers and fresh herbs. And the best part? It only takes 20 minutes to make from start to finish.


Ingredients

  • 2 Tablespoons Sun-Dried Tomato Oil
  • 1/2 Cup Sun-Dried Tomato in Oil, roughly chopped
  • 1/2 Cup Diced Onion
  • 4 Cloves Garlic, minced
  • 2 to 3 Tablespoons Capers, drained
  • 1 Teaspoon Italian Seasoning
  • 2 Heaping Tablespoons Gochujang Paste
  • 3/4 Teaspoon Red Pepper Flakes
  • 1 Teaspoon Smoked Paprika
  • 2 Cups Low Sodium Chicken Stock or Broth
  • 12 Ounces Fresh Tortellini (any flavor)
  • 1/2 Cup Heavy Cream
  • 3/4 Cup Grated Parmesan
  • 3 Tablespoons Fresh Basil, chopped
  • 3 Tablespoons Fresh Flat Leaf Parsley, chopped
  • Lemon Zest + Lemon Juice

Instructions

  1. To a large pan, add 2 tablespoons of the oil from the sun-dried tomatoes.
  2. Add your diced onions, minced garlic, sun-dried tomatoes, capers, gochujang, Italian seasoning, red pepper flakes and smoked paprika. Sauté on medium/high heat for 2 to 3 minutes.
  3. Add the chicken stock and let it comes to a boil.
  4. Next, add the fresh tortellini. Cover and let it cook over medium heat for about 3 to 4 minutes or until al dente. 
  5. Stir in heavy cream and grated parmesan cheese. Followed by chopped fresh basil and parsley. Taste and season with salt and pepper if needed. *see note below
  6. Serve with finely grated lemon zest, squeeze of lemon and more cheese. Enjoy!!

Notes

*If you decide to omit the capers and or gochujang, you'll need to season with a bit of salt.
